Bursty berry baked porridge

Serves 1- but you can scale it up 

Prep 4 minutes + 25 minutes in the oven

This is almost too simple to warrant a recipe, but just in case you’ve not tried baked porridge before, I thought I’d show you how I like it. It’s a really good weekend breakfast as you can throw it all together, go and do half an hour of yoga (or go back to bed) and return to a a fruity smelling kitchen and a lovely hot, sweet, and creamy breakfast. You might notice that I don’t use any sort of milk in this. Alternative milks are a bit expensive, and I’ve found that oats make their own starchy creaminess anyway. Plus, the baked banana is really creamy and sweet too, so I’m very happy to use water.


  • 4 big heaped tbsp. oats per person
  • 1 banana per person
  • A small handful of berries per person (frozen is fine)


  • Pre-heat the oven to gas mark 5
  • Mash your banana and spread along the bottom of a small baking dish
  • Pour the oats on top and spread out evenly
  • Lay or scatter your berries on top
  • Use a jug to slowly pour water over everything, and stop when the water just covers all of your ingredients
  • Bake in the oven for 25 minutes
  • Eat it up and feel good all day
