Surprising carrot cake muesli

Carrots for breakfast?? It’s good, I swear. I make these real nice healthy carrot cake cookies sometimes (recipe soon), and woke up today wanting to capture that sweet-spicy goodness in a cereal bowl. The absolute game-changer is the earl grey raisins: they are so juicy and fragrant! The recipe has the fresh part (carrots, banana, raisins), as well as the dry muesli part. I like to make  a big batch of the muesli to make life easier on more rushed mornings, so scale up that bit to double or quadruple quantities if you like.

Serves 2

Ready in under ten minutes


  • 1 handful of nuts and seeds (walnuts brazils, and pumpkin seeds are particularly good, but honestly I just used a mixture of what I had around)
  • 8 tbsp. porridge oats
  • ½ tsp. ground ginger
  • ½ tsp. cinnamon


  • 1 small carrot, grated
  • 2 bananas
  • 2 heaped tbsp. raisins
  • 1 earl grey teabag
  • Honey or maple syrup to serve



  • But the raisins in a mug with the teabag and cover with water from the kettle. Leave for at least 5 minutes
  • Put the nuts in a food processor and blend a little. They should be in nice little chunks. Add the oats and spices and pulse once or twice to mix everything together
  • Use a fork or the food processor to mash up the banana with 3 tbsp. water
  • Add in the carrots and the dry stuff, and scoop your raisins out of the tea and chuck them in as well. If the mixture seems a little bit dry and more water. I suppose you could use almond milk or something but I never buy that stuff, and think water is fine.
  • Serve immediately or chill in the fridge until you want to eat. Spoon into bowls with a drizzle of something sweet
